Why does each vine have its own story?

In Chablis, the term climate has a very special meaning. In Bourgogne, a climat designates a well-defined plot of vines, whose name has often been known for centuries, sometimes since the Middle Ages. It is not just a piece of land: it is a place steeped in history, a unique space where Chardonnay (the emblematic grape variety of Chablis) finds a preferred terrain.

Each climate has its own geological, climatic, and sun exposure characteristics, which directly influence the quality and flavor of the grapes. In Chablis, these characteristics are even more pronounced thanks to the soil. Kimmeridgian, limestone and rich in marine fossils, which gives the wines an incomparable minerality.

What's fascinating is that each climate produces its own wine, and this wine is named after the climate where it was grown. For example, wine produced in the Climat des Clos or Vaudésir will not have the same aromas or texture as wine produced elsewhere. The personality of the climate is reflected in each bottle, year after year, thanks to the meticulous work of the winemakers who cultivate these vines.

This unique system of viticulture, which so intimately links the wine to its place of production, makes Chablis an exceptional vineyard. The region's climates are not only one aspect of its "terroir", they are the soul, and this is what gives Chablis wines their very special character.

En Bourgogne, when we talk about a climate, we don't raise our eyes to the sky, we lower them to the earth.

Bernard Pivot

Chardonnay: the grape variety that makes all the difference

Chardonnay, the emblematic grape variety of Chablis, is a true pillar of viticulture Burgundian. Although this grape variety is cultivated throughout the world, it is in Chablis that it reveals its full singularity. It is no exaggeration to say that “Chablis is Chardonnay, but not all Chardonnays are Chablis.”, as wine specialist Rosemary George points out.

But what makes the Chardonnay What makes Chablis truly unique is the diversity of expression it offers from one estate to another. Although all Chablis wines are made from the same grape variety, each winemaker brings their own touch. The vinification method, the exposure of the vines, the aging and bottling choices influence each vintage, creating an infinite aromatic palette. What remains constant is the mineral signature of the terroir, which gives the Chablis wines this impression of purity and freshnesscheur.

Chablis is not just a wine, it is a true embodiment of "terroir". Thanks to Chardonnay, it embodies a subtle alchemy between the land, the climate and the expertise of the winemakers. It is this union that allows the production of wines of exceptional quality, both delicate and powerful, fresh and complex, always imbued with this typicity that makes Chablis a unique place in the world.
